Panini Perfection with the Tramontina Cast Iron Grill Pan
One of my absolute favorite lunches is a panini. I can’t pass up the warm, melted cheese, crisp bread, and endless variations you can create. I’ve tried the fancy electric presses, but I have to say my stove top Tramontina Bestow Enameled Cast Iron Grill Pan with Press is by far my favorite.

But let’s be honest: my favorite way to use it is still a panini. Here’s a recipe I keep coming back to:
Chicken Pesto Panini
Ingredients (makes 2 paninis):
4 slices of sourdough or ciabatta bread
2 tbsp pesto (store-bought or homemade)
1 cup cooked chicken breast, thinly sliced
4 slices fresh mozzarella (or provolone)
1 roma tomato, thinly sliced
Handful of fresh spinach or arugula
Olive oil or softened butter for brushing
Instructions:
Preheat your cast iron grill pan over medium heat.
Spread pesto evenly on each slice of bread.
Layer chicken, mozzarella, tomato, and spinach between two slices.
Lightly brush the outside of the bread with olive oil or butter.
Place the sandwich on the grill pan and top with the press. Cook 3–4 minutes per side, until bread is golden and cheese is melted.
Slice in half and enjoy warm.
That’s it—a simple, delicious panini that tastes just as good (if not better) than your favorite café. Pair it with a side salad or a warm bowl of soup, and you’ve got a cozy meal that’s quick enough for lunch or satisfying enough for dinner.
